Leftovers then breakfast
Often called Hobo Soup, it’s an incredibly versatile soup/stew recipe that you can make at home, over a campfire, or in a slow cooker.
Add in the bell pepper, garlic, soup mix, beans, green beans, potatoes, carrots, and corn. Add in remaining ingredients. Stir to mix.
Add in the broth and tomato juice. Bring to a boil stirring occasionally, and reduce heat to a simmer.
Cover and simmer on low for 20 – 30 minutes or until the potatoes are tender. Season with salt and pepper to taste. Serve warm with crusty bread!
