Roasted Brussels Sprouts Salad with SWEET cranberries, CRUNCHY walnuts, and CRISP apples is perfect for a light and delicious weeknight meal or a new go-to side dish for your next holiday celebration.

Ingredients

Preheat oven to 200°F. Line a baking sheet with parchment paper.

Place cranberries in a medium sauce pan with enough water to cover. Bring to boil and then allow to simmer for 2-3 minutes to allow cranberries to “pop”. Once “popped” place in a bowl and toss together with coconut oil and sweetener.

Once cranberries are done; heat olive oil in skillet over medium heat.
