Step 1

In a large pot or dutch oven, melt the butter over medium-high heat. Season chicken thighs with salt and black pepper.

Sear or brown both sides of the chicken in the melted butter until golden brown. Add in the diced onions, celery, and carrots to the pot.

Step 2

Reduce the heat to low and add the chicken thighs back into the pot. Cover and simmer for 30 minutes or until the chicken is fully cooked.
