Shred 3 cups of chicken, and dice your celery for ¼ of a cup.
In a large mixing bowl, combine the shredded chicken with diced celery, as well as ¾ cup of mayo. Season with ¼ teaspoon of salt, and ¼ teaspoon of pepper or to taste.
Mix until all ingredients are coated. Spread on bread for a refreshing sandwich, or dip with crackers for a filling snack!
