Ingredients

  • 8 slices bacon diced small
  • 1 small onion finely chopped
  • Half a small green bell pepper finely chopped
  • 56 ounces pork and bean
  • 1/2 cup barbecue sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon black pepper

Instructions

  • Preheat your oven to 325 degrees.
  • Chop the bacon and cook till brown in a large skillet.
  • Remove bacon from the pan and drain off all grease except for about 1 tablespoon.
  • Add onions and peppers to the pan with the bacon grease and cook until translucent.
  • In a large bowl stir together the beans, veggies, bbq sauce, ketchup, brown sugar, mustard, pepper and Worcestershire.
  • Pour the beans into a 9x13 baking dish. Top with the cooked bacon.
  • Bake uncovered for 1 to 1 ½ hours covered, then uncovered for 30 you want them to bake and thicken up nicely.
  • Serve warm!

Notes

  • Use LOTS and LOTS of bacon! – my favorite tip 🙂
  • Make sure to use high quality bbq sauce. Don’t skimp on this one.
  • Prepared yellow mustard is best for a good tangy flavor.
  • If you need even more tang, add 1 tablespoon apple cider vinegar.
  • Want spice? Add a few jalapeño slices before baking.
  • Are you vegetarian, just leave out the bacon and use plain beans.
  • Want variety? Swap out some of the navy beans for northern or pinto beans.
  • Want even more smokiness? Add a few drops of Liquid Smoke.
