Air Fryer Smashed Potatoes

These crispy air fryer smashed potatoes are a delicious side dish made with just a few simple ingredients. Perfect for a busy weeknight!

Ingredients

  • 1 lb Baby Golden Potatoes
  • 1 teaspoon salt kosher, divided
  • 1 tablespoon olive oil
  • 1/2 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper

Instructions

  • In a saucepan, add the potatoes and fill with water until the potatoes are just submerged.
  • Add 1/2 teaspoon of the salt to the water. Set the saucepan over medium-high heat.
  • Bring the potatoes to a boil for 20 minutes 
  • Drain the potatoes and let the rest for 1 minute. 
  • Using a flat bottom bowl or glass, smash the potatoes to a 1/2” thick.
  • Lay the potatoes in the air fryer basket and drizzle with oil.
  • Season the potatoes generously with the remaining spices.
  • Cook the potatoes at 400ºf for 15-20 minutes until the potatoes are crispy. Flip the potatoes halfway. 
  • Remove the potatoes and let cool before serving. 

Notes

  1. Use fresh garlic instead of garlic powder if you have it on hand.
  2. If you’re using larger potatoes, cut them into smaller pieces before boiling them.
  3. For extra crispy potatoes, brush them with melted butter, garlic butter, or even vegan butter before cooking them in the air fryer.
  4. To avoid overcrowding the air fryer basket, cook the potatoes in batches if needed.
  5. Use a potato masher or the bottom of a glass to smash the potatoes.
  6. Drizzle olive oil over the potatoes before seasoning them. This helps them to get extra crispy!
