Ingredients

  • 3 cups shredded cooked chicken
  • ¼ cup diced celery
  • ¾ cup mayo
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Combine all the ingredients in a bowl.
  • Chill in the refrigerator.
  • Enjoy on bread as a sandwich or with crackers.

Notes

  • Before combining, I chill my chicken so it is ready to serve.
  • If storing, store in an air-tight container for no longer than a week.
  • Lower the fat content with fat free mayonnaise.
  • If serving after it has been stored, give the salad a quick mix and serve it with a fresh sprinkle of salt and pepper.
  • Don’t bother attempting to freeze this; it will ruin the consistency. Instead, cook and shred your chicken, throw it in the freezer and pull it out whenever you’re craving Zoe’s chicken salad.
