Ingredients

black eyed peas
drained
3/4
cups
Onion
diced
3
stalks Celery
diced
1
small Bell Pepper
any color, diced
1
cup
Smoked Ham
cut into small bite sized pieces
½
cup
Cilantro
chopped (optional)
Salt and pepper to taste
1
teaspoon
Cajun Seasoning
2
Bay Leaves
1
teaspoon
Minced Garlic

ounces
spicy V-8 Juice
1
cup
Water or 1 can Diced Tomatoes
optional

cup
Cooked Rice
Instructions
Add all ingredients except cooked rice to slow cooker and cook on low for 2-3 hours.
Remove bay leaves.
Stir in hot cooked rice and garnish. Enjoy!
