Puff Pastry Apple Turnovers

Don’t you just LOVE apple season?!

I am blessed to live pretty close to quite a few apple orchards and plan on going apple picking when the time is right. They also make great cider;)

But aside from that, what can you do with apples? One of my favorite things to make with them is an apple turnover. Especially with Granny Smith apples. The tart flavor pairs nicely with sweet glaze.

These are such an easy treat made with simple ingredients! You will never buy turnovers from the grocery store again.

I bet you can almost feel the flaky crust as you bite into it…

What is a Turnover?

A turnover is a triangle shaped pastry filled with an apple filling, that is baked into a flaky, golden brown treat.

They are like a hand pie or empanada, only bigger. And bigger is better when pastry is concerned!

Sounds down right yummy doesn’t it!?! Apple turnovers are great for breakfast, lunch, dinner, dessert, and every occasion in between.

Ingredients Needed

Pie filling – Apple pie filling is the best but you can also substitute your favorite flavor instead.

Puff pastry – Buy in the frozen section or make it homemade if you have plenty of time and patience. You can also use refrigerated pie crust in a pinch.

Egg wash – Beat one egg with a tablespoon or two of water.

Glaze – Powdered sugar, water, and cinnamon.

The delicious cinnamon glaze is amazing drizzled on top but they are just as tasty without it!

Does the apple pie filling need to be cooked?

You are using prepared apple pie filling that is already cooked so you don’t need to cook it again. If you make it from scratch, then I would add a pinch of lemon juice while you cook it.

How to Make Apple Turnovers from Scratch

First: Preheat oven to 375F. Thaw puff pastry sheets and cut into 8 squares (4/sheet) on a lightly floured work surface.

Second: Place 1 heaping tablespoon apple pie filling on each square. Fold pastry over apple mixture making triangles. Crimp edges with a fork to seal. Make small slits to release steam.

Third: Make egg wash by whisking 1 egg and a little water. Brush pastry triangles with egg wash. Sprinkle the top of the turnovers with coarse sugar (optional).

Fourth: Place pastries on a prepared baking sheet lined with parchment paper. Bake at 375 degrees for 30 minutes or until golden brown. While baking, prepare the glaze.

Fifth: Combine the milk, vanilla, cinnamon, and powdered sugar in a small bowl. Stir to combine. When apple turnovers are done, remove from the oven and place on a wire rack.

Sixth: After they cool slightly, drizzle with cinnamon glaze and enjoy!

How long do they last?

Store any leftovers in the fridge for up to 3 days. I would leave off the glaze so they don’t get soggy.

Can you freeze them?

Yes, you can! Simply freeze the turnovers after adding the apple pie filling. Don’t egg wash the tops. Place on a baking sheet and freeze.

Once they are frozen, transfer to a freezer bag or airtight container and store for up to 3 months.

When ready to bake, place frozen turnovers on a lined baking sheet, brush with egg wash, and bake.

Can I use pie crust if I don’t have puff pastry?

Yes, you can. One round refrigerated pie crust is equivalent to a sheet of puff pastry. Just follow the same steps and lower your cooking temp to 375F. Baked as directed.

How To Thaw Puff Pastry

Frozen puff pastry is great to have on hand for recipes like this but it does need to thaw first. If it’s too cold, the sheets will crack when unfolding.

Thaw the puff pastry in the refrigerator overnight for best results. If you are in a hurry, you can thaw on the counter for 20 minutes or until soft enough to handle.

Don’t let it come to room temperature or it will be sticky and hard to handle.

How do you seal puff pastry?

Brush the inside edges with egg wash and fold the pastry together. Pinch or crimp the edges of the puff pastry with a fork or fold over to prevent leaks.

Tips For No Leftovers

  • Make a small slit with a sharp knife to release the steam while baking.
  • Dust with sanding sugar or brown sugar before baking for a crispier crust.
  • Line the baking sheet with parchment paper, nonstick aluminum foil, or silicone baking mat for easier cleanup.
  • Use a pizza cutter to slice pastry dough.
  • Don’t overstuff them or they will burst while cooking.
  • Cool for few minutes, the filling will be super hot.
  • Egg wash for a golden brown color on the pastry.
  • Don’t add glaze if you’re going to freeze them. Do that after you thaw them.
