Spicy Buffalo Chicken Wraps

Crispy buffalo chicken strips, crisp fresh vegetables, and a creamy ranch dressing, all wrapped in a soft flour tortilla. Looking for a delicious lunch? These buffalo chicken wraps are just the thing!

My new favorite things to eat for lunch are wraps. I always have tortillas around so I just toss whatever leftovers I have in the fridge into them.

Not a casserole or spaghetti type leftovers but any extra fried chicken, some peel and eat shrimp, or even a hamburger patty.

Top with some salad veggies and a little dressing and lunch is done! Plus it’s portable so I can take it with me if I decide to work at a coffee shop for a little bit.

These buffalo chicken wraps use frozen buffalo chicken tenders (which I always have one hand too), crisp veggies, and a homemade spicy ranch dressing. I know you will love these as much as I do.

Ingredient Notes

  • Tortillas – I like to use the flour tortillas that are ready to cook. But you can substitute your favorite flour wrap. Make small ones using the fajita size or large ones with the burrito size tortillas.
  • Chicken – For this recipe I use Tyson Buffalo Style Chicken Strips. This chicken is fully-cooked, so I only have to bring it back to life in the air fryer. Substitute your favorite breaded chicken, or you can even use leftover chicken if you don’t want it spicy. Grilled chicken is also an option if you are looking to lighten the calories.
  • Toppings – Green onions, tomatoes, avocados, shredded carrots, lettuce, chopped celery, shredded cheese, a dash of lime juice, homemade buffalo sauce. Use your favorites!

How To Make Buffalo Chicken Wraps

  1. Warm your tortillas/wraps, set aside, and keep covered. Place all the ranch dressing ingredients in a bowl.

  1. Whisk to combine, cover, and place in the fridge to chill while you cook the chicken.

  1. Preheat the air fryer to 380F. Add the chicken tenders and cook according to package directions. Set aside to cool slightly.

  1. Chop the lettuce, celery, slice tomatoes and avocados, and grate cheese.

  1. Place wrap on plate, top with lettuce, tomatoes, and celery. Slice chicken and add to wrap.

  1. Top with cheese and wrap. Serve with spicy ranch dressing.

How long do they last?

I would assemble them as I am ready to serve and keep all the toppings and dressing separate.

They will last 2-3 days chopped in the fridge. You can even cook the frozen chicken, cool, and store in the fridge the same amount of time.

Can I make them ahead of time?

The chicken is pre-cooked so they are easy to make one at a time when you’re ready to eat. You can assemble them ahead of time but I would leave off the tomatoes and dressing.

They can make things soggy and the tortilla can tear. It’s best to prep everything, keep it in individual bowls, and then let everyone make their own.

Can I eat this wrap cold?

Yes! You can enjoy this wrap cold as long as your chicken is fully cooked. This makes an excellent lunch box meal, or a great lunch on the go!

I recommend packing the dressing separately and not pouring it on the wrap until you are ready to eat. 

Can I use grilled chicken instead?

Yes! If you prefer grilled chicken instead of breaded chicken, I would personally add a little extra hot sauce to the chicken strips if you want them to be spicy.

The breaded chicken that I use is buffalo style, so it already has all that spicy goodness, and I don’t need to add anything extra.

Tips For No Leftovers

  • Depending on the size of the chicken, I use one medium-large chicken tender per wrap. If you use buffalo chicken patties, you can slice them into bite-size pieces. Feel free to use more or less based on your own preference.
  • Use your favorite store bought hot sauce like Frank’s Red Hot, make your own buffalo sauce, or use your favorite wing sauce.
  • The original recipe calls for the use of a breaded chicken that is buffalo style, so you may want to add additional hot sauce to your chicken if it is plain.
  • Switch up the ranch for blue cheese dressing if you prefer.
  • Want to make it lighter? Use grilled chicken or grab a rotisserie chicken from the deli for easy prep.

Ingredients

Dressing

  • 2/3 cup mayonnaise
  • ½ cup sour cream
  • ½ tablespoon Italian seasoning
  • ½ tablespoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • ½ teaspoon Himalayan pink salt or regular table salt
  • 3 tablespoons milk you can add an extra 2-3 tablespoons to thin if you don’t want a thick dressing.

  • 1 cup romaine lettuce chopped

  • 1 stalk celery diced

  • 16 ounces buffalo chicken tenders frozen
